A staple of Mandalay Bay since the hotel opened in the late '90s, this modern Mexican eatery is the brainchild of celebrity chef owners Mary Sue Milliken and Susan Feniger. Their philosophy has always held that Mexican cuisine should be light and healthful with a large dose of flavor -- something they deliver through the use of seasonal, locally-grown ingredients whenever possible, meats and poultry raised without antibiotics or hormones, and sustainable seafood.

Situated on the way to the Mandalay Convention Center and Shark Reef, the restaurant began a large-scale renovation in 2026. One feature that remains as amazing as ever is the downstairs patio seating, offering views of the lazy river and pool.

A good way to sample the cuisine is the all-you-can-eat small plate brunch served on weekends. Your choices include lobster corn cakes, Peruvian drunken French toast, avocado salmon toast, diablo fried chicken, shrimp and grits, steak & eggs and spicy chicken tamale.

Highlights of the dinner menu include unique items such as duck carnitas, vegan relleno, Oaxacan short rib, Baja ceviche tostada, smoked prime rib taco and churro ice cream sandwich.
