Recommended in the dim sum category by Lip Smacking Foodie Tours President Donald Contursi, this Taiwanese restaurant chain specializes in xiao long bao dumplings, and has more than 170 restaurants in 13 countries worldwide.
Its location at Aria offers views of CityCenter and the Strip via 40-foot floor-to-ceiling windows. But the most impressive sight is that of the handiwork involved in preparing the steamed pork soup dumplings. The team swiftly makes each with great attention to detail: precisely 18 folds, 16 grams of meat and 5 grams of dough, which are carefully weighed.
Options for the xiao long bao are Kurobuta pork, crab and Kurobuta pork and truffle and Kurobuta pork. Several more non-beef options include jidori chicken bun mixed with chopped carrots, celery and oyster mushrooms; cod dumpling with Taiwanese cabbage, celery and water chestnuts; and vegan dumpling filled with a mixture of bean curd, baby bok choy, shiitake mushrooms, wood ear mushrooms, glass noodles and jicama.
