Its location at Aria offers views of CityCenter and the Strip via 40-foot floor-to-ceiling windows. But the most impressive sight is that of the handiwork involved in preparing the steamed pork soup dumplings. The team swiftly makes each with great attention to detail: precisely 18 folds, 16 grams of meat and 5 grams of dough, which are carefully weighed.
Options for the xiao long bao are Kurobuta pork, crab and Kurobuta pork and truffle and Kurobuta pork. Several more non-beef options include jidori chicken bun mixed with chopped carrots, celery and oyster mushrooms; cod dumpling with Taiwanese cabbage, celery and water chestnuts; and vegan dumpling filled with a mixture of bean curd, baby bok choy, shiitake mushrooms, wood ear mushrooms, glass noodles and jicama.
