Stubborn Seed
$ $ $Winner of Top Chef season 13, James Beard Award semifinalist and Michelin Star recipient, Chef Jeremy Ford brings Stubborn Seed to Las Vegas from Miami. And with it, he brings some of his most mind-blowing creations: sea urchin panna cotta; charred jerk carrots with spiced yogurt, mint and candied peanuts; and a tart that layers foie gras, truffle and fiji apple gelee.
The tasting menu offers a full tour of the chef’s most interesting creations, while a la carte ordering allows you to mix the experimental and avant garde with more familiar options (including a rather fantastic burger). Favorites include the delicate sake and citrus-cured yellowtail, rich lamb fagotelli, barramundi, and the decadent wagyu striploin. And you'd be missing out if you skipped dessert, specifically, the snickerdoodle cookie served with barley ice cream.
The restaurant's atmosphere is just as impressive, blending chic Art Deco style with a modern, glass-fronted kitchen that lets you watch the magic happen.
We wish the caviar macaron was on the à la carte list, but maybe the salty and sweet treat is a lure to go back for the chef's curated experience, which when you do the math, is a screaming deal for $145 per person.
