While Carversteak is a new addition to the crowded Strip steakhouse scene, many already consider it among the best of the best.

“Carver and Chef Daniel (Ontiveros) are well deserving to take their seat at the table among the best steakhouses in Las Vegas,” proclaim Cuisineist’s Elaine and Scott Harris.

“A resounding yes,” echoes celebrity chef Rick Moonen. “Both the service and the food are top notch.”

“Carversteak embodies the experience of the American steakhouse with a 21st century flair,” adds longtime Las Vegas food writer Debbie Hall.

Many cite the all-star team assembled by Las Vegas nightlife veteran Sean Christie, including cocktail guru Francesco LaFranconi, master sommelier Steve Geddes and veteran chef Daniel Ontiveros. Other love the glitzy décor and high-tech touches that adorn the massive (14,500 square feet) space. And beverage writer Bob Barnes loves the Nevada-born touches, from the custom cutlery to some local whiskey.

The steaks (including F1 and A5 wagyu) are top-notch. But don’t’ overlook the imaginative and original starters and sides. And make sure someone tries the Lobster En Croûte (a whole Maine Lobster with cognac cream sauce, wrapped in puff pastry). Moonen also recommends the caviar service as “well worth the trip.”
