Anima by EDO
Anima is the second restaurant by the team behind EDO, a Spanish tapas restaurant in Chinatown that's widely regarded as one of the best in Vegas. Anima has a larger space near Summerlin at the Gramercy and while a few dishes cross over between restaurants, the new place has its own distinct menu with a stronger Italian and Mediterraean influnce.
You'll see more pastas and seafood here, as well as a greater wine selection. However, the expertise and originality of Chef Oscar Amador remains front and center with creative, intricately prepared dishes, and carefully sourced ingredients. You'll taste the quality in every bite of a 30-day dry-aged striploin carpaccio or truffle cavatelli with bone marrow.
The dining room has a bright, open feel with a charcuterie station near the front door and a roaming gin-and-tonic cart. Prices are more than fair, and an especially strong value with food of this caliber. Like EDO, Anima offers tasting menus and the kitchen team is gracious about working around any allergies or preferences.
