Located in Village Square, this bakery’s owner —Chef Florent Cheveau — is the 2018 USA World Chocolate Master, who after working at Jean Philippe Patisserie at Bellagio and Aria and as executive pastry chef at MGM Grand, moved from the Vegas Strip to open his own bakery. The name represents Cheveau’s birthplace, and the shop is filled with actual street signs from his hometown of Chablis, French newspapers dating from the 1890s epoxied into the tables and vintage French advertising posters.

Everything on the menu is made fresh in-house from scratch with many hard-to-find items. Las Vegas-based food and beverage writer Bob Barnes, impressed with the variety of the menu, says, “The menu is comprised of both sweet and savory with Danish, frittata, bagels and croissants; hot sandwiches such as chicken pesto, Cuban and croque monsieur; ham & cheese, chicken and veggie crepes; bread, croissants and beignets; desserts including tarts, cakes, macarons, Napoleons, flan and assorted eclairs; and espresso, cappuccino, latte, mocha and hot chocolate.”
