Gabi’s Gorditas

$

This Latin comfort food restaurant was a Mountain’s Edge neighborhood pick by Golden Tiki Beverage Director/Mixologist/Brand Ambassador Adam Rains and a Quick Serve pick by food and beverage writer Bob Barnes, who says, “Industry veteran Freddie Delatorre is offering a healthy version of Latin cuisine featuring the gordita, a small pastry a bit thicker than a tortilla that’s cut open and filled with ingredients and then eaten much like a taco.”

Examples of the healthy aspects are the use of flour instead of corn masa (which would need to be fried) and air frying with very little oil, and leaner meats made as a stew to meld flavors without having to add fat.

Non-traditional global ingredients found throughout Latin America and the Caribbean are sourced, such as grilled cactus, jicama, Peruvian beans, chimichurri sauce, caramelized plantains and roasted poblano, creating a Latin fusion that should appeal to pretty much anyone.
