This is one of the nine 100% plant-based Las Vegas restaurants recommended by VegansBaby.com founder Diana Edelman, who says:
"Restaurateurs Tabitha and John Simmons came upon Amelia Copper during the pandemic. She was doing meal prep and Tabitha happened to order some of her food. Realizing there was untapped talent behind the dishes, she reached out to Amelia to talk to her about partnering on a restaurant. The self-proclaimed obsessive home cook joined forces with the Simmonses to open Graze Kitchen late 2021.
Serving “charismatic” plant-based food, Cooper and Co. have created a menu that relies on flavors and textures rather than mock meats to carry the dishes. Here, you’ll find light and airy whipped deviled hummus, the tenderest of soy curls a top a bed of Korean BBQ nachos, a grazing platter of artisan vegan cheeses, as well as bowls and sandwiches that will likely charm you into eating more. The restaurant also serves infused vodkas, hard kombucha and vegan wine."
