Todd English's Olives
For those who remember when Bellagio was new, particularly the team that worked at the resort in the early days, the return of Olives is a cause for celebration. It’s a chance to relive old memories through familiar bites of Chef Todd English’s cuisine. By the end of that restaurant’s nearly 20-year run, however, it had lost a bit of its luster. So for the younger generation, the Virgin incarnation is their first chance to experience English’s Mediterranean cuisine through signature dishes such like carpaccio with gorgonzola polenta, fig & prosciutto flatbread, and one of the most glorious complimentary bread services in Las Vegas.
English’s Virgin location boasts a spacious dining room with views of the hotel pool deck and the open kitchen. The lounge, visible from the main room, hosts live performers nearly every night. And the staff includes several Olives Bellagio team members who have returned to the family.
